Pregnancy Dinner Ideas

I’ve recently been gifted the HelloFresh food boxes and really enjoyed the variety it provided. It however takes me longer to make one of these meals, and estimated 40-50 minutes, compared to when I cook my own meals, only 30 minutes. I’ve decided not to continue using the food boxes but to rather make my own little weekly menu of things that I like and that I can make.

SInce I am pregnant I do crave a lot of things, sometimes unhealthy foods like the donuts or chocolate I have once or more a week. These meals are just things that I either know how to make or that I’ve discovered online….today 🙂

When working full time and having a family to feed, time isn’t always on your side. Very often the only thing you want to do when you get home after a hard day, is to sit down and relax. This post includes 5 healthy recipe’s that you can  make in less than 30 minutes.

Broccoli Rabe and Sausage Parsnip Spiralized Pasta

INGREDIENTS:

  • 1 bunch broccoli rabe, stems trimmed
  • 2 links spicy Chicken Italian Sausage, casings removed
  • 1/2 tsp dried oregano
  • 2 parsnips, peeled and spiralized, noodles trimmed
  • 2 cloves garlic, minced
  • 1/4 tsp crushed red pepper flakes
  • kosher salt and black pepper
  • 1/2 cup low sodium chicken broth
  • 1/2 cup grated parmesan cheese

One Skillet Chicken with Bacon and Green Beans

INGREDIENTS:

  • 4 strips center-cut bacon, chopped
  • 1 pound boneless, skinless chicken breasts, cut lengthwise into thin cutlets
  • kosher salt
  • freshly ground black pepper
  • 2 tablespoons minced shallot
  • 2 cloves garlic, minced
  • ¾ cup low-sodium chicken broth
  • ½ cup crisp white wine, such as Sauvignon Blanc (use broth for Whole30 or Paleo)
  • 1 teaspoon chopped fresh thyme
  • 8 ounces French green beans

Grilled Scallop and Orange Kebabs with Honey-Ginger Glaze

INGREDIENTS

  • 1 tbsp raw honey (I like to buy local)
  • 1 large navel orange (or 2 small)
  • 1 tbsp fresh grated ginger
  • oil for the grill
  • 12 jumbo sea scallops, about 1lb
  • kosher salt and black pepper

Red White and Blue Fruit Skewers with Cheesecake Yogurt Dip

INGREDIENTS

For the cheesecake dipping sauce:

  • 4 oz 1/3 less fat cream cheese, softened
  • 1 cup fat free Greek yogurt
  • 1 tsp vanilla
  • 1/4 cup raw sugar

For the skewers:

  • 14 oz angel foods cake, cut about 1-inch cubes
  • 72-84 medium strawberries (about 3.5 lbs) stems removed
  • 1 pint blueberries
  • 24 to 28 skewers

BAKED POTATO SOUP

INGREDIENTS:

  • 2 medium russet potatoes, washed and dried
  • 1 small head of cauliflower  (3 1/2 cups or 16 ounces), stem removed cut into florets
  • 1 1/2 cups fat free chicken broth
  • 1 1/2 cups 1% reduced-fat milk
  • salt and freshly cracked black pepper
  • 1/2 cup light sour cream
  • 10 tbsp reduced-fat shredded sharp cheddar cheese
  • 6 tbsp chopped chives, divided
  • 3 slices bacon, cooked and crumbled (you can use turkey bacon if you prefer)
