Bombay Brau- Haeundae Review

A few weeks ago we went to Busan City in South Korea for Chuseok ( Korean Thanksgiving). We always love going to Busan over the holidays because its close to where my brother lives and we usually get to visit the ocean.

We usually go to Haeundae because we once read that it was a great place to visit. There are always a lot of great western and foreign restaurants. One of these restaurants is Bombay Brau. It’s an Indian restaurant that sells THE BEST curry. If you’ve ever had the shop bought curry here in Korea you’ll know that its not all that. But this place has the best curry for sure!!

We’ve been there twice and will definitely visit them again. Their prices are reasonable at around 14,000 Korean won ($14). We usually take the Butter chicken with garlic naan but my brother has eaten lamb curry there and it’s just as good. They also have a variety of their own custom beer that you should definitely try.

Fudgy Chocolate Brownies

This past week has been a real chocolate covered week for me… and not just figuratively. At one stage I was covered in cocoa powder and my socks drenched in chocolate. Now this might seem strange but I accidentally spilled some of my chocolate cookie dough on the floor, and in an attempt to clean it up, got it all over my socks 😦

I was planning on making Mini lava cakes over the weekend and since I had all the ingredients already I decided to try out some of Sally’s Fudgy Chocolate Brownies. They’re quite easy to make and super delicious. They are crunchy on the outside and soft, fudgy and chocolatey on the inside. Similar to these cookies here. It creates a real chocolate explosion in your mouth. I only have small baking pans so I made 2 pans and managed to get 18 brownies from the recipe.

I’ve heard people say that if you are a true baker you don’t need a recipe but I find that if I don’t follow the recipe it doesn’t come out the way it is supposed to. For me, leaving out 10 grams can mean the difference between perfection and disaster.

INGREDIENTS

  • 3/4 cup (12 Tbsp; 175g) unsalted butter
  • one 4 ounce (113g) semi-sweet chocolate bar, coarsely chopped
  • 2 cups (400g) granulated sugar2
  • 3 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup (95g) unsweetened natural or dutch-process cocoa powder3
  • 1 cup (125g) all-purpose flour
  • 1 teaspoon salt
  • 1 and 1/4 cups (225g) semi-sweet chocolate chips

Preheat the oven to  350°F (177°C) and grease a 9×13 inch pan.

Heat the chopped chocolate and butter in the microwave in 30 second segments. Stir in between until it is soft and all the chocolate has melted. Mix in the sugar until combined then add the eggs and the vanilla extract.

In a separate bowl whisk together the cocoa powder, flour and salt. Then add the dry ingredients to the chocolate mixture. Add the remaining chocolate chips..

Transfer to the baking pan and spread the mixture evenly. Bake for 30 minutes. Check whether the brownies are done by inserting a toothpick into the brownies. If the batter is still wet, bake it for another 5-10 minutes. If only a few wet crumbs come out, then your brownies are done.

Remove the pan from the oven and set on a wire rack to cool. Once cooled, cut into squares.

Curried bunny-Chow

I’m so exited to share this recipe with you. When I was living in South Africa I wasn’t really a fan of rice dishes so this recipe was perfect for me. Instead of rice you have bread as a carb base.

This curry dish can be made with either chicken, beef or lamb. This particular one was lamb and personally I prefer lamb curry because the meat isn’t as dry as the chicken or beef. Its a basic curry recipe but instead of the rice you’ll use bread. The bread is cut into 4 equal sized squares, then cut out the soft bread on the inside and save it for later. This is a must try recipe and its super delicious.

Bunny Chow ( Serves 4)

INGREDIENTS
  • 1kg lamb pieces
  • Little oil to cover base of pot
  • 2 large cinnamon sticks
  • 1 tsp fennel seeds
  • 1 bay leaf
  • 6 green cardamoms
  • 4 cloves
  • A sprig of curry leaves
  • 1 tsp crushed green chillies
  • 1 large onion, finely diced
  • ½ tsp turmeric
  • 2 tbs crushed ginger and garlic mix
  •  3 level tsp medium chilli powder
  • 2 tsp dhania-jeeru powder
  • 1 tsp garam masala
  • 1 tbs vinegar (your choice on type) I normally use white vinegar
  • 2 tsp sugar
  • 2 tomatoes, blended
  • 5 small to medium potatoes, quartered
  • chopped fresh coriander
  • salt to taste

Heat the oil in a pan. Add the cinnamon, fennel, bay leafs, cardamoms curry leaves and cloves. Then add the chillies, onions, turmeric, ginger and crushed garlic, Braise the mixture for about 4-5 minutes.

Then add the chilli powder, dhania-jeeru and garam masala. Add the vinigar and sugar and mix the mixture well. Then add the meat and stir until all the meat is covered with the spices. Braise the meat until a little browned. Then add the potatoes.

Cut a loaf of bread into 4 equal parts. Cut out the centre of the bread square to form a bread ‘bowl’

Cook on a medium heat until the potatoes are almost fully cooked. Remember to check the mixture often and add water so that it doesn’t burn out.When potatoes are about 3/4 cooked  add the tomatoes . Once the potatoes are cooked you can add the coriander. Add salt to taste. Scoop the mixture into the bread ‘bowl’ and enjoy.

50 Shades food ideas for Valentines Day

Since you’re more likely to spend your day under the covers you wouldn’t need a big feast to keep you busy, therefore I have chosen a simple blueberry muffin for breakfast. According to E.L James, Christian Grey wanted Anastasia Steele to eat healthy food so for the dinner I have also chosen a homemade chicken salad and no-bake Cheesecake with fresh ingredients for dessert.

Blue Berry Muffins.

My mother in law recently made these muffins and they were wonderfully soft. She absolutely loves eating them with cream and jam and I thought that that would be a great breakfast option. Who doesn’t like blueberry muffins?

These blueberry muffins are box muffins, so you can just use the instructions on the box, add some fresh blueberries if you like and garnish with whipped cream and strawberry or blueberry jam.

Chicken salad

INGREDIENTS

  • Fresh Chicken Salad ( serves 2)
  • 1 tablespoon olive oil
  • 2 chicken Breasts
  • 1 large tomato
  • 4 leaves of lettuce
  • 1/2 sweet red or yellow pepper
  • Cheddar cheese cubes (optional)
  • Croutons (optional)
  • Salt and pepper to taste
  • Honey and mustard dressing

First fry the chicken breast in the olive oil.Then chop all the vegetables and tear the lettuce into pieces by using your hands. You can add cheddar cheese cubes an croutons if you like. Mix in the honey and mustard sauce and salt and pepper and its ready to serve.

This no-bake cheesecake is one of my favourite recipe’s it is so easy to make and it doesn’t take long at all. It is a light desert with a lovely cheese flavour.

Healthy Breakfast Muffins

Hi Everyone. Since I went to South Africa for a holiday I’ve been eating non-stop. I gained about 8 pounds and now that I’m back home in Korea I have to get back to eating normally and making some changes in my sugar intake so you can expect a few more healthier meals from me in the next few weeks 😀

Bran muffins are an excellent meal for breakfast, lunch or even just for a snack, they are wholesomely delicious and juicy. I use a basic packet of Bran Muffin mix and make it as specified and then comes the special ingredients…. add a cup of raisins and 1 grated apple. This gives the muffins a fruity taste and moist consistency. You could even go further by adding a grated carrot to give it more of a carrot cake feel.

INGREDIENTS

  • 1 BOX/Packet bran muffin mix- around 250 grams (usually you should add eggs or oil and water or milk, just check the specifications for the muffin mix)
  • 1 cup raisins
  • 1 grated apple
  • 1/2 teaspoon cinnamon ( Optional)
  • 1 grated carrot (optional)

Mix the muffin mix as indicated on the packet. Add the raisins, grated apple, carrot and cinnamon. Scoop mixture into lightly greased muffin pans and bake for 25 minutes or until a toothpick comes out clean.
