  • 2 cups full-fat plain Greek yogurt
  • ¼ cup honey
  • 2 cups fresh or frozen mango flesh (frozen is the simple choice and is available in most markets)
  • ½ cup whole milk
  • ¼ cup orange juice
  • ½ teaspoon cardamom
  • 1 cup crushed ice
  • Mint, for garnish (optional)

INGREDIENTS

  • 12 oz plain low fat Greek yogurt
  • 1/2 cup canned pureed pumpkin (not pumpkin pie filling!)
  • 1/4 teaspoon ground cinnamon
  • pinch of allspice
  • 2 tablespoons honey
  • 4 tablespoons chopped toasted walnuts, plus extra for garnish
  • 4 tablespoons sweetened dried cranberries

Mango Lassi Greek Yogurt Tarts with Almond Crust

This one takes a little longer than the other recipe’s but is definitely worth the wait.

INGREDIENTS

For the filling:

  • 2 1/2 cups of sliced champagne mango (around 4 mango’s).
  •  1/4 cup of granulated sugar
  • Juice of 1/2 lemon
  •  Pinch of salt
  •  Pinch of ground cardamon (a little goes a long way!)
  •  1 tablespoon of cornstarch
  •  2 tablespoons of water
  •  2 tablespoons of greek yogurt (you can substitute for soy yogurt if vegan)

For the crust:

  •  1 stick of butter at room temperature (you can replace for 2 ish tablespoons of coconut oil if vegan)
  •  2 1/2 cups of almond meal
  •  2 tablespoons of brown sugar
  •  1/4 teaspoon of vanilla
  •  Pinch of salt

  • For the cake
  • ½ cup (1 stick) unsalted butter, at room temperature
  • ¾ cup granulated sugar
  • 1 large egg
  • ½ cup whole milk
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 cups all-pupose flour
  • 2½ cups fresh blueberries
  • For the topping
  • 1 cup firmly packed light brown sugar
  • 1 cup all-purpose flour
  • 1 teaspoon grond cinnamon
  • ½ cup (1 stick) unsalted butter, cut into pieces at room temperature
  • For the glaze

Picnic Wedding Ideas

I remember when my husband and I were looking for wedding venues that one of the venues offered a Picnic Wedding setup. The pictures they showed us reminded me of a fairy garden with red, pink and orange pillows strewn over a rich green lawn, with lush gum trees overhead. It was just magical. But at that time the venue was really expensive and I rather wanted a different type of outside wedding.

In honour of that memory, here are some great ideas for a Picnic wedding.

There are various option for a picnic wedding, you can do it in the morning or at night. You could choose to keep it traditional with pillows and blankets on the ground or with tables and chairs, or even picnic benches. It all depends on your personal style and how comfortable your guests will be.

Great food ideas includes homemade pies, cheese and cracker platters, sandwiches, fresh fruits and fruit salads. Furthermore a cute picnic basket for each table would make it extra special but having a central table with all the food displayed on it will work equally well

 

Your dress

If you choose to do the picnic wedding your dress should be comfortable enough to sit on the floor with. This does not mean that if you want an elegant wedding dress that you would not be able to wear it. It only means that you can now possibly get 2 dresses instead of one. One for the wedding ceremony and one for the reception.

 

When choosing a picnic wedding and the type of reception setup always consider the age of your guests, no use letting senior citizen with bad knees sit on the ground if they are expected to get up and down the whole time. If you have older family members maybe consider giving them tables and chairs while allowing the younger guests to sit on the ground.

I Duttits- Making a Rainbow Cake

A few weeks ago I posted about not being able to make a proper cake… Well this time I’ve done it. Last week was my husband’s birthday and he requested a rainbow cake.

OK I have to admit, I kind of cheated… I used ‘box’ cake but the colouring I did all by myself :p

I mixed the cake mix as indicated on the box. I used Betty Crocker cake mix and then divided into four bowls and added colouring.

My plant was to decorate the cake with an icing bag, but my husband doesn’t like buttery icing so the icing was too stiff to push through a bag. Unfortunately I forgot my camera on and I couldn’t take a picture when I finished icing the cake. Therefore I only took a picture after we started eating the cake but here it is

Every year we have a mini ghost house at our academy along with snacks, movies, and games. The kids always love being scared and a lot of kids show up for the event. My husband had a witch-cottage room and I had an Oogie boogie room. As promised here are some picture of how our rooms turned out.

For the Oogie Boogie room we used neon blacklight reactive paints and 2 black lights but unfortunately the black lights didn’t last for the full 4 hours of the event.

We had a lot of fun during our weekend event but we’re glad that its over with for now and we can take it easy, until next year….

Happy Hour-White Wine Sangria

Back home one of the pubs near our home use to have happy hour on a Friday. It was the perfect day because it means you can wind down from a stressed filled week. Instead of going to the pub though I have decided to have my own happy hour at home by making a White Wine Sangria

INGREDIENTS

  • 1 Bottle Sweet white wine
  • 1/2 cup Raspberries
  • 1/2 sliced Lemon

Put everything together in a jar or bottle. Serve chilled.
